Modified Atmosphere

The modified atmosphere technique is based on changing the air composition that surround the packed food, most importantly reducing oxygen levels as low as none because oxygen is chemically active and both react with the food and/or allow varied aerobic life forms to grow over it. Oxygen is replaced with nitrogen or carbon dioxide. The air is either flushed out with a different gas mixture, or vacuumed and removed totally so the desired gas mixture will be inserted.

Among vegan products that are packed using this method are processed fruits and vegetables, bakery goods, ready meals and dried foods as pasta and crisps.
